Well, Apple does not support installing Itunes on a W3k server, but it can be done anyway (I’m using it with my Iphone 3Gs). This is how I done (I got info on how from http://sites.google.com/site/yukichigai/iphonex64):
1. I’ve downloaded the latest .exe installer from apple.com
2. I’ve extracted the .exe using winrar to C:\Temp\iTunesSetup.
3. From here I first ran iTunes.msi, which installed without a hassle (I guess you have to install Quicktime first, I but already had it installed).
4. I then tried to run AppleMobileDeviceSupport.msi (but I got an error message that “requires that your computer is running Windows XP SP2 or newer”).
5. I’ve downloaded Orca (from http://sites.google.com/site/yukichigai/Orca.msi?attredirects=0) and opened AppleMobileDeviceSupport.msi in it. Here I changed LaunchCondition to: “(VersionNT=501 And ServicePackLevel>=2) Or VersionNT>=500″, saved the file and re-run AppleMobileDeviceSupport.msi. This time it installed without any error messages.
6. Then I’ve started Itunes and everything worked ok!

Worked great. Tried “Save as…” from Ocra first so as not to overwrite the original file but that didn’t work. So I made a copy of AppleMobileDeviceSupport.msi and then saved over it with Ocra and it worked.

i’m doing likes this ways:
1. Download itune 10 from apple site
2. Download Orca from http://sites.google.com/site/yukichigai/Orca.msi?attredirects=0
3. Extract iTunesSetup.exe into c:\temp\itunesetup\
4. Install ORCA
5. Using ORCA open file c:\temp\itunesetup\AppleMobileDeviceSupport.msi
6. change LaunchCondition to: “(VersionNT=501 And ServicePackLevel>=2) Or VersionNT>=500″ and save it to the same file
7. Install itunes
now i can enjoy all app sync including my fav music, photo etcs on my ipad 2

You legend, I’ve got it working.
However just for information I encountered further problems after this (maybe to do with the latest iTunes at the point of writing this as 10.5).
iTunes would not install the Bonjour service correctly stating bonjour\mdnsNSP.dll failed to register. To work around this, I ran iTunes.msi NO_BONJOUR=1 in CMD. Of course you cannot use some features i.e. AirPlay but this did not matter for me.
I then had an error of missing d3d9.dll for some strange reason, but a simple update of DirectX solved this.
Just thought I’d share in case anyone else has the same issue.
